Tomato Focaccia
Focaccia Pugliese From: 100 Great Breads by Paul Hollywood (p. 61): Ingredients Dough: 2 garlic cloves + 75 ml Olive oil 500g strong white flour 10g salt 20g yeast 250ml water Top: 2 garlic cloves + 50ml Olive oil Salt water: 15g salt + 60mL water 2-3 plum tomatoes, thinly slice Prep Mix in bowl, knead for 6 minutes Put back in bowl, wait 1 hour Line baking tray w/ Shape into ~28x22cm Prick top of dough all over w/ fork Add salt water and remaining olive oil Place tomatoes on top Rise for 1 more hour Preheat ove 220C, bake for 20-25 minutes
