Focaccia Pugliese

Ingredients

Dough:

  • 2 garlic cloves + 75 ml Olive oil
  • 500g strong white flour
  • 10g salt
  • 20g yeast
  • 250ml water

Top:

  • 2 garlic cloves + 50ml Olive oil
  • Salt water: 15g salt + 60mL water
  • 2-3 plum tomatoes, thinly slice

Prep

  1. Mix in bowl, knead for 6 minutes
  2. Put back in bowl, wait 1 hour
  3. Line baking tray w/
  4. Shape into ~28x22cm
  5. Prick top of dough all over w/ fork
  6. Add salt water and remaining olive oil
  7. Place tomatoes on top
  8. Rise for 1 more hour
  9. Preheat ove 220C, bake for 20-25 minutes
