Jajangmyeon Noodles

  • 5 TBSP. Chunjang (춘장), Korean black bean paste some may be labeled as jjajang (짜장)

  • 2 TBSP. cooking oil

  • 1 TBSP. sugar

  • (1 TBSP. oyster sauce - optional)

  • 1 cup chicken Stock or water

  • 1 TBSP. potato or corn starch dissolved in 1/4 cup of chicken stock or water

  • 200g. Shiitake

  • 1 tsp. grated ginger

  • 1 TBSP. rice wine (or mirin)

  • 1/8 tsp. salt

  • 1/8 tsp. pepper

  • 2 TBSP. cooking oil

  • 1 TBSP. soy sauce

  • 1 extra large onion

  • 225g cabbage

  • 225g zucchiniu

  • 1 small cucumuber
